So normally when I have leftover rolls that aren't eaten - I toss them out. This Thanksgiving I decided to attempt bread pudding with our leftover rolls and was pleasantly surprised at how tasty it is! Here's the recipe I tried:
Brown Sugar Bread Pudding
2 cups bread cubes
1/2 cup brown sugar
1/4 tsp salt
1 tsp cinnamon
1 tsp vanilla
2 1/2 cups milk
1/2 cup raisins (optional)
2 slightly beaten eggs
1/2 cup chopped walnuts (optional)
2 tbsp butter
Combine bread cubes with brown sugar, salt and cinnamon. In another bowl blend together eggs, vanilla, & milk. Stir egg mixture in with bread cube mixture. Pour into well-greased 1 quart baking dish; dot with butter. Bake at 325 degrees for 45 minutes or until inserted knife comes out clean. Be sure it's done in the middle - this is a nice recipe because it isn't very sweet, but perfect on a cold evening. You can also top it with whip cream. :o)

Oh Jill- I've been SUCH a horrible friend! You are so good at checking blogs and I've been terrible. I'm SO sorry that I haven't been here sooner. I'll finally put you on my blog roll and maybe that will help me remember. Congratulations on the success of your two sweet kids! I hope they are adjusting well and you are too. YOUR background is cute. How fun. I LOVE Christmas- and I LOVE music that comes with it (and yes, the U2 song- we just love them) We are singing a bunch this month so it will be SO fun.
