Hello Zucchini

We came home from our 10 day trip to OK to find a cucumber and 2 HUGE zucchinis!


Can you believe the size of that thing? Oh my goodness! Now for what I need from all my faithful readers: ZUCCHINI RECIPES!!!

OH my gosh! That is the BIGGEST zucchini I have EVER seen! Oh wow. I actually have the best zucchini bread recipe. I've made it for years and we just love it! Here goes:
3 eggs
1 cup oil
2 cups sugar
2 cups peeled grated zucchini
3 tsp. vanilla
3 cups flour
1 tsp. salt
3 tsp. cinnamon
1/4 tsp. baking powder
1/2 tsp. baking soda
1 cup nuts if desired

Grease and flour 2 loaf pans. Beat eggs till light and fluffy. Beat in sugar, vanilla, and then oil a small amount at a time. Add the rest of the ingredients and stir. Bake at 350 for 45 min-1 hour or until toothpick comes out clean.

Cut it into strips and grill it with a little butter and garlic salt...it is amazing!

My mom has a great zucchini bread recipe if you're interested...or you could just use Nicole's...doesn't matter to me =) Now I want to go buy some zucchini and make zucchini bread! It's actually the only way I'll eat it. Any other way has never appealed to me.....

CHOCOLATE ZUCCHINI CAKE (from Canada)

Moist and delicious! Keeps well and tastes better and better.
Preheat oven 350 °F

Cream together in larger bowl:
1/3 c. butter softened*
1½ c. sugar*
1/3 c. canola oil
2 large eggs
1 tsp vanilla
½ c. sour milk or buttermilk

In separate bowl mix:
2¼ c. all purpose flour (unbleached)
1 tsp. baking soda
3 tbsp. cocoa powder
½ tsp. cinnamon
¼ tsp. cloves

Add dry ingredients to bowl with wet ingredients. Mix well.

Stir in:
3 c. grated zucchini (peel on)

Pour into a greased 9x13 inch pan then press on top:
¾ c. semi-sweet chocolate chips

Bake for 40 min. at 350 °F. Let cool 5min in pan then remove.

Enjoy!

... My inlaws are Italian and as seems to be the norm around here ... they have a huge garden! Zucchini and tomatoes are always especially PLENTIFUL!

Zucchini bread, yummm!!! It looks like your trip was fabulous! I love visiting family, but it is also fun to come home!

WOW!!!!! That is honestly the biggest zucchini I have ever seen :-)
My favorite way to do zucchini is to just cut it into thin slices (usually rounds, but since your zucchini is so large, you'd probably need to cut it into thin bite-size slices. Then, saute the zucchini slices in butter until they are golden brown and caramelized (like onions).

I've also come across a recipe for zucchini pie (kinda like apple pie) but I've not yet had the chance to try it. It sounds like it could be good though :-)
