Don’t give up. Don’t you quit. You keep walking. You keep trying. There is help and happiness ahead. You keep your chin up. It will be all right in the end. Trust God and believe in good things to come. Some blessings come soon, some come late, and some don’t come until heaven; but for those who embrace the gospel of... Jesus Christ, they come. -Elder Jeffrey R. Holland
OH my gosh! That is the BIGGEST zucchini I have EVER seen! Oh wow. I actually have the best zucchini bread recipe. I've made it for years and we just love it! Here goes: 3 eggs 1 cup oil 2 cups sugar 2 cups peeled grated zucchini 3 tsp. vanilla 3 cups flour 1 tsp. salt 3 tsp. cinnamon 1/4 tsp. baking powder 1/2 tsp. baking soda 1 cup nuts if desired
Grease and flour 2 loaf pans. Beat eggs till light and fluffy. Beat in sugar, vanilla, and then oil a small amount at a time. Add the rest of the ingredients and stir. Bake at 350 for 45 min-1 hour or until toothpick comes out clean. Enjoy!! xoxo
My mom has a great zucchini bread recipe if you're interested...or you could just use Nicole's...doesn't matter to me =) Now I want to go buy some zucchini and make zucchini bread! It's actually the only way I'll eat it. Any other way has never appealed to me.....
WOW!!!!! That is honestly the biggest zucchini I have ever seen :-) My favorite way to do zucchini is to just cut it into thin slices (usually rounds, but since your zucchini is so large, you'd probably need to cut it into thin bite-size slices. Then, saute the zucchini slices in butter until they are golden brown and caramelized (like onions).
I've also come across a recipe for zucchini pie (kinda like apple pie) but I've not yet had the chance to try it. It sounds like it could be good though :-)
