Dinner Menu for a week

My sister, Heather, recently asked me for some dinner recipes to make. I decided to come up with a week of dinner recipes for her and thought, why not share this with anyone else who wants them?! Many of them are crockpot recipes, so fast and easy. Enjoy!

Please note that I did not organize the ingredients in any way, just copied them straight from the recipes. Therefore, you might want to organize them yourself when at the store so you get enough of any ingredients that might be on the list multiple times. This is my menu for the next week, mostly. Good luck!

Menu:
Tortellini and white bean soup (I would pair this with salad)
Slow cooker Tuscan beans (I would pair this with French bread)
Lamb and Barley soup (This goes great with bread or rolls)
Crockpot Beef Chili, tortilla chips or fritos
FHE dessert: Halloween Rice Krispie Treats
Spicy Black Bean Corn Casserole
Slow cooker red beans and rice
Corn Chowder with Shrimp


1 tablespoon olive oil 
2 ribs celery, sliced
1 15-oz. can diced tomatoes, drained
1/2 teaspoon dried oregano
2 cloves garlic, minced
6 cups low-sodium chicken broth
1 8-oz. package fresh cheese or meat tortellini
1 15-oz. can white beans, drained and rinsed
Salt, optional
1/4 cup grated Parmesan 
1 pound dried cannellini beans, rinsed and picked over
6 cloves garlic, crushed
1 sprig fresh sage
Salt and pepper
6 teaspoons extra-virgin olive oil
2 lamb shanks, 14 to 16 oz. each, trimmed
2 carrots, diced
2 ribs celery, chopped
1 large onion, chopped
8 cups low-sodium chicken or beef broth
1/2 cup pearl barley
Salt and pepper
2 tablespoons chopped fresh parsley, optional
3 lbs stew beef
1 tbsp oil
3 garlic cloves, minced
3 cans (16oz) kidney beans, rinsed and drained
3 cans (15oz) tomato sauce
1 can (14 1/2oz) diced tomatoes, undrained
1 cup water
1 can (6oz) tomato paste
3/4 cup salsa verde (in the Mexican isle at the store - it's a green salsa in a jar)
1 envelope chili seasoning
2 tsp dried minced onion
1 tsp chili powder
1/2 tsp ground cumin
Fritos or Tortilla Chips
6 cups Cocoa Krispies (or Other Puffed Rice Cereal)
5-¼ ounces, weight Reese's Pieces
3 Tablespoons Butter
⅓ cups Peanut Butter
10-½ ounces, weight Mini Marshmallows
- 3 Tbsp. diced green chiles, divided 
- 1 lb ground beef
- ½ cup salsa
- ¼ cup chopped green onions
- ¼ cup chopped fresh cilantro
- 1 (15 oz.) can black beans, rinsed and drained
- 1 (11 oz.) can corn with red and green bell peppers, drained (I just used canned corn)
- 1 (10 oz.) can enchilada sauce
- 1 egg
- 1 (8½ oz.) package corn muffin mix
- 2 Tbsp. chopped bottled roasted red bell peppers (optional)
- 1½ cups (6 ounces) pre-shredded reduced-fat Mexican blend or Cheddar cheese
- 6 Tbsp. reduced-fat sour cream
- 1½ tsp. thinly sliced fresh cilantro
3 cups water
1 cup dried red kidney beans
1 cup chopped onion
1 cup chopped green bell pepper
3/4 cup chopped celery
1 teaspoon dried thyme
1 teaspoon paprika
3/4 teaspoon ground red pepper
1/2 teaspoon black pepper
1/2 (14-ounce) package smoked sausage
1 bay leaf
5 garlic cloves, minced
1/2 teaspoon salt
3 cups hot cooked long-grain rice
1/4 cup chopped green onions
  • 4 cups low-sodium chicken broth
  • 2 16-oz. bags frozen corn
  • 1 onion, finely chopped
  • 1 red bell pepper, seeded and diced
  • 2 carrots, cut into 1/4-inch rounds
  • 2 russet potatoes, diced
  • 1 bay leaf
  • Salt and pepper
  • 1 pound medium shrimp, peeled and deveined
  • 1/2 cup heavy cream, optional
  • 1/4 cup chopped fresh parsley
