Tape Fiend

Well, the truck is still in the shop so we didn't even have the option of going to the YMCA since Tyler had to be at PT at 7am. So I got up around 8am, showered and got ready for the day b/c I was going to babysit Lydia, but her mom called and asked to reschedule it for friday. No problem.

It was another beautiful day!!! And I'm feeling better, which always helps. I'm still coughing up...stuff, and my nose still runs...but I also got an hour long nap today which helped a lot. I did some major cleaning--b/c you all know that when I start feeling the least bit better I work hard so I'm so exhausted and then it takes me MUCH longer to overcome the sickness...--but if you could see how NICE the house looks right now, it's all worth it.

While I was taking that lovely 1 hour nap, can anyone guess how Anna spent her unsupervised time? She taped my computer chair. I'm talking she used up the whole tape dispenser on this one metal chair. Nice. So we spent some time taking it off...she loves tape. Birthday present for Anna? Send tape. Christmas present? More tape. Easy enough.

I've been trying to watch another bollywood movie called DON with Shahrukh Khan (who else do I want to watch?) but the first copy didn't work and today I got another copy and it didn't work. ARG. So now I'm going to try it on the laptop...we'll see if that works.

I made some pb caramel popcorn today. I love air-popped popcorn. However, all my recipes for it involves sugar...does anyone have a recipe for air-popped popcorn that's cheese or butter topped? (that questions ought to bring out some health nuts)

Sweet 'n' Spicy
1/8 cup popcorn kernals
2 tablespoons butter
2 cloves garlic
2 teaspoons chili powder
1/2 teaspoon hot sauce
Salt
1/2 cup honey roasted peanuts

Pour popcorn into a bowl. Place butter in a small ramekin with garlic cloves, chili powder, and hot sauce and melt in microwave on high, 15 to 20 seconds. Drizzle hot and spicy butter over the popcorn and season with salt, to taste. Add honey peanuts to popcorn and eat!

Sweet Sesame Five-Spice Popcorn
1/2 cup unpopped corn kernels
1/4 cup sugar
1/4 cup vegetable oil
1 teaspoon five-spice powder
1 teaspoon salt
1 tablespoon toasted sesame seeds


Place popcorn, sugar, oil, five spice powder and salt in a large kettle or pot with a tight fitting lid over medium heat. When corn begins to pop, shake the pot constantly. When popping slows, remove from heat, sprinkle with sesame seeds and transfer popped kettle corn to a bowl.

Zippy Italian Popcorn
1/8 cup popcorn kernals
2 tablespoons butter
1 teaspoon garlic powder or granulated garlic
1 teaspoon dried oregano
1 teaspoon crushed red pepper flakes
1/3 cup grated Parmigiano, eyeball it

Pop the corn and place in a bowl. Place butter and spices in a small cup or bowl and place in microwave oven and melt, 10 to 15 seconds on high. Stir and pour mixture over the popped corn. Sprinkle the corn with cheese and serve.

Al Fredo's POPcorn
3 tablespoons vegetable oil, 3 turns of the pan
1/2 cup popping corn
4 tablespoons butter
1 clove garlic, cracked away from skin
1 cup Parmesan
Salt and black pepper

Place oil in a heavy pot with lid and heat over medium high heat. Add corn and pop, shaking the pan until popping slows to 2 or 3 seconds between pops. Melt butter with garlic in microwave 15 seconds on high. Discard garlic clove. Pour butter over corn and add cheese to corn. Turn to coat. Season corn with salt and black pepper, to taste.
