Reflections

I'm still not up to par - so I stayed home from church today. I don't like missing church. I tried to do things at home to feel the Spirit and strengthen my testimony. It occurred to me that the church is set up to help us feel the Spirit - all we have to do is attend with an open heart and we'll feel the Spirit. How easy is it just to go to church? It's more difficult to actively find activities to feel the Spirit (in my opinion) and yet, every Sunday an opportunity to do so awaits us at church. As a family we're reading in the New Testament now and I've wondered what life must have been like throughout the centuries without Christ's church here upon the earth. How lost I would be without this church. I am blessed to have the gospel in my life and to know others who follow it faithfully. I have so many wonderful examples of how to follow Christ in day-to-day life. I appreciate you.

Today I'm making a fabulous fajita recipe that I'd like to share with you, it's perfect for Sundays:

Slow Cooker Fajitas
SERVINGS: 8
METHOD: Slow Cooker
TIME: Prep: 25 min. Cook: 8 hours
Ingredients:
1 each medium green, sweet red and yellow pepper, cut into 1/2-inch strips
1 sweet onion, cut into 1/2-inch strips
2 pounds boneless beef sirloin steaks, cut into thin strips
3/4 cup water
2 tablespoons red wine vinegar
1 tablespoon lime juice
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon pepper
1/2 teaspoon cayenne pepper
8 flour tortillas (8 inches), warmed
1/2 cup salsa
1/2 cup shredded reduced-fat cheddar cheese
8 teaspoons minced fresh cilantro

Directions: Place peppers and onion in a 5-qt. slow cooker. Top with beef. Combine the water, vinegar, lime juice and seasonings; pour over meat. Cover and cook on low for 8-9 hours or until tender. Using a slotted spoon, place about 3/4 cup meat mixture down the center of each tortilla. Top with 1 tablespoon salsa, 1 tablespoon cheese and 1 teaspoon cilantro; roll up. Yield: 8 servings.

I noticed you weren't at church today. I was a little disappointed. Ive grown to know you (as it seems) on here... And I gotta say I think we could be really great friends! You've been really friendly to me when we first moved in and really made a big impact in my life. It's soooo hard for me to make friends whenever I move into a new place and You made it very easy for me. So, Thank you!

Today in RS it was about how mothers are teachers.. I realize that most of the women there are mothers, but I was thinking it sure would be nice if they acknowledged the women that don't have children (now or yet). So, in other words I didn't feel like I could comment. I took in their insights for a later time, but I just wish they could have acknowledged women who don't have that option yet... I know I am complaining a little bit...but I wanted to tell someone else besides my husband and maybe you would understand.

also, I've realized that i'm jealous of all my friends. I kinda new it before, but after this lesson in RS I realized i really am jealous. I'm happy that they are pregnant or have children. But, it irks me to know end taht they don't even try to get pregnant and then they become pregnant. I think i need to work on that. Maybe heavenly Father is giving me the lesson on patience (cuz i have zero). But, what a cruel way to learn patience (i think).

I really like your option of 3 different music types. Great idea. You should have a Bollywood option. ;) I hope to watch the news ones soon. I'll let you know how they are.
